Spinach Madeleine recipe (Side Dish)

Ingredients

4 tablespoons butter
½ cups chopped onion
2 packages frozen chopped spinach
½ cups celery, chopped
1 teaspoon garlic, minced
2 tablespoons flour
½ cups vegetable liquor
4 oz Velveeta Mexican Hot Cheese
½ teaspoons Worcestershire sauce
some   salt and pepper

Instructions

Cook spinach according to package directions. Drain and reserve liquor.

Melt butter in heavy skillet over medium heat. Add onions and celery and cook until soft. Add garlic and flour, stirring until blended and smooth. Add liquid slowly, stirring constantly to avoid lumps. Then add cheese and seasonings. Stir until melted.

Combine with cooked spinach and place in a shallow casserole dish. Top with breadcrumbs; cover and refrigerate overnight.

Bake at 350° F until bubbling hot.
