Vegetarian Chili recipe (Main Dish)

Ingredients

cups chopped onions
¼ cups olive oil
2   minced garlic
½ cups chopped celery
1 cup chopped bell peppers
1 cup chopped carrots
1 teaspoon oregano
1 teaspoon salt
2 cups tomato sauce
1 can crushed tomatoes
¾ cups bulgur wheat
some cans black beans/ red/pinto
some tablespoons canned green chillies
1 tablespoon ground cumin

Instructions

Heat oil in a medium pot or skillet on medium high heat.
Add onions, cumin chili powder and red pepper flakes. Cook for several minutes, stirring often then add garlic. Continue cooking and stirring mixture is very fragrant. Add the celery, bell pepper and carrots. When the vegetables begin to soften, add the oregano salt and black pepper. Continue cooking and stir a few minutes
