South of the Border Salad recipe (Salad)

YOU'LL NEED
Yield: 1 main dish portion, or 2 side portions

cups romaine lettuce
½ cups cucumbers, peeled & chopped
½ cups canned black beans
¼ cups corn kernels
1 oz shredded cheese
¼ cups salsa
¼ cups avocado, chopped
cilantro

Instructions

Shred lettuce and place in salad bowl. Add cucumber.
Warm black beans & corn in microwave, about 45 seconds, and add to bowl.
Sprinkle with cheese and top with salsa & avocado.
Garnish with fresh cilantro.
