Soy Sauce Salmon recipe (Fish)

YOU'LL NEED
Yield: 4 servings

Marinade:
6 tablespoons sugar
8 tablespoons soy sauce
2 tablespoons wine
--------
2 lb salmon filets
2 tablespoons canola Oil
10   garlic cloves

Instructions

Combine sugar, soy sauce and wine in a bowl. Mix thoroughly till sugar dissolved and set aside. Cut fresh salmon into 4 even pieces. Put them in another bowl. Pour 2/3 of the marinade over the salmon. Let it stand for 20 minutes. Slice the garlic and set aside. Heat a heavy-bottomed skillet pan over high heat for about 2 minutes. Add oil to pan and swirl to coat. When oil shimmers, add fillets skin side down and cook, without moving fillets about 30 seconds. Reduce heat to medium-high. Cover the pan with a lid. Continue to cook about 4 minutes. Turn fillets and cook, without moving them. Pour the rest of marinade over fillets evenly. Add sliced garlic in the pan and cover it with the lid. Let the pan cook for 3 minutes. Remove fillets from pan to a plate. Pour the sauce in the pan over fillets. Garnish with chopped scallion or cilantro. Serve.
